Raspberry Jam Ganache Recipe -Truffles

2 cups of dark chocolate (preferably over 54 percent)
1 cup of heavy cream
2 table spoon corn syrup
4 table spoon hgd raspberry jam (or add 1 table spoon more if needed)

1) Heat heavy cream in sauce pan and add corn syrup to a small simmer. 

In a separate container have your chocolate and pour warm heavy cream mixture into the bowl. Stir with whisk until you see no more heavy cream.

Add HGD Raspberry Jam and mix until smooth chocolate mix.

Pour chocolate ganache mixture in a plastic container and place in refrigerator over night to stiffen. ( if it is still soft place in the freezer for a bit )

Scoop with small scooper and roll in nuts or candy coating.(normally coated in tempered chocolate but that is a whole other class;-) )

-side note. This ganache can be used as a dipping sauce for fruits or for a chocolate filling for cupcakes or cake filling.

Here is our suggestion for chocolate to use in your ganache.  It is a 60 percent semi sweet .
